I am not an expert with moodle and have what is hopefully a simple question: how do you change the size of a formula that is rendered with tex? As it is some of the numbers and variables are barely 1 mm tall, especially numerators and denominators.

You can zoom in the whole page - in Mozilla it is in "View"->"Zoom" menu.
If you want to have a try with WIRIS math tools for Moodle you can easily change the image size in the configuration file (parameter $CFG->wirisimagefontsize ).
