I am trying to edit the text that appears in the navbar. Specifically, I want to change Course Categories to other text in one of my installations. I have edited the moodle.php and that did not solve my problem. Any other ideas?

Marc, editing moodle.php should be right. Check carefully all the occurencies of "Course" and also search the string "coursecategory", then edit accordingly. You can easely do that thru the Moodle web interface for checking/editing the language pack.
Actually I created a file called block_nav.php in the lang/en directory you can make your changes to this file.
I did this rather than use moodle.php since it is not part of the main moodle tree and we can just drop these few files into any moodle installation without having to edit source files.
