If the a dialogue was set to "separate" group mode and then closed, since it's now a closed dialogue, would the separate group mode still apply to it? the other groups who aren't selected cannot view the dialogue right..?

The (latest) Dialogue activity only allows one to one 'conversations' so the group mode doesn't behave as it would in a forum. It simply allows you to sort the members in the 'Open a dialogue with' dropdown.
This means members of a group cannot see each other's dialogues anyway. If a dialogue is closed the two users it belonged to can still see it, just not add to it.
