There are quite some issues (old an new) in the tracker related to an annoying bug when receiving forum e-mail as plain text:

Markdown email bug (revisited) (MDL-17831)
Markdown email bug (MDL-6252)
In mail messages (plain text), problem with web links (MDL-1649)
CLONE - Symbols 'less than' and 'more than' spoil a text in auto-format (MDL-18838)
Tags in message body are hide (auto-format) (MDL-3747)

As this problem still seems to persist (see http://tracker.moodle.org/browse/MDL-17831?focusedCommentId=70363&page=com.atlassian.jira.plugin.system.issuetabpanels%3Acomment-tabpanel#action_70363) I would suggest creating a META issue for bundling the efforts. I couldn't find out how to do that, though. Any help appreciated.
