I've had a complaint that the installation guide assumes too much system administration knowledge, and I can see it might be confronting for many users who just want to try it out.
A detailed step-by-step guide suitable for any teacher to get Moodle working under Windows would be useful, I think, as well as Mac OS X and Redhat Linux. This would assume a vanilla system and go through the whole process of installing/enabling Apache, PHP, MySQL etc (the easiest way possible).
Does anyone want to volunteer to write these, so I can add them to the install docs? I'm guessing you'll probably be able to Google something similar on the net which you can adapt.

I can probably help with Redhat 8.
When I installed my system I went around in quite a few circles before Martin helped me out - and I am a Systems guy.
My system is working great now due to the billions of changes (well maybe not billions, but it seemed a lot), but of course I didn't take detailed notes.
I would be willing to run up another system from scratch to document the process - but this won't be possible for another few weeks.
Alternatively, if anyone was thinking of starting out with a new Red Hat system, I could talk them through it, and we could document as we go.
Thanks everyone for a great product and supportive community.

Cool - that would be great.
A good place to work on these would be in the Moodle Wiki. http://moodle.org/wiki

I would be interested in helping you. I just installed OS X based system (apache, php, mySQL, and phpMyAdmin) and had some problems. I am an somewhat experienced UNIX user (with lots of shortcomings) and so was able to solve my problems....sort of....some yet to handle. I see some need for rewriting of install instructions from my side (user). I am not a scripter/programmer.... although I can usually follow the code.
Misunderstanding about permissions and paths were a problem for me....finding files...lots of times folks writing directions assume LINUX or Windows and Apple likes to locate "stuff" in unusual places.
Well...yes if I can be of assistance I would like to help....might learn something in the process.

On my Powerbook, I use the built-in Apache with PHP from here http://www.entropy.ch/software/macosx/php/ which I found very easy.
I use the MySQL which comes with Fink from http://fink.sourceforge.net/ but it's probably best to go with http://www.entropy.ch/software/macosx/mysql/.
Both of Marc's packages already have install docs so it's just a matter of following both of those I would think.
Perhaps you could integrate them if you can see a way of making it all clearer and easier.
