I've been looking through and I may have passed over my answer, so if I have, please bear with me. I have been assigned to administer a new moodle implementation on a new server to support a new intranet. However, we have an existing moodle deployment on a older server which is to be retired. I need to know how to move all of the information, classes, users, teachers, etc. from the old server into the new one. We are hoping it will be possible and a reasonably easy task.

It may not be a reasonably easy job, but it is possible. You need to do individual backups for each of your old courses and then restore each of them (one at a time) on the new server. That being said, there are quite a few things that can go wrong, so you need to thoroughly check all of the restored courses on the new server to make sure all of the content (images, videos, quizzes) etc were transferred specifically.
As a side note, I've found that there are a few quirks with restoring to 1.92 on a Linux server that if you create a "blank" course with the same title, upload the backup file to that new courses file folder, and restore on top of the new course that it can mess up some of the dates and the length of the course depending. In this case I would recommend uploading the backup to the file folder for another course first (go to another course and select restore, upload the file and then click on restore) and when restoring choose "create a new course".
