You could try that sort of thing - but if you are doing that sort of then, then the log data might be better - I think that more direclty represents what you are interested in.

Look at all the log data for one userid and one context id of a quiz.

That would need to be created as a separate activity module plugin. E.g. https://moodle.org/plugins/mod_adaptivequiz does something similar, only with a different algorithm, rather than a neural net.
