You can add 5 random questoins picking from each category.

Here is an enhancement we are thinking about MDL-84387. What do people think?
Basically, we are thinking of adding a list of submitted files to the confirmation email that goes to the student when they submit. We think that would be good for the student's peace of mind. It also reduces the ability for people to argue later about what they acutally submitted.

Behind the scenes, there will need to be an account created, and the user need to be logged in with the account, but it might be possible to hide that from the user.
For embedding questions, a modification of https://moodle.org/plugins/filter_embedquestion might work - but at the moment, that requires the user to be logged in to Moodle.
