Using the Parent role the parent can see the child's grades but not the actual submitted assignment (because that would involve the parent being enrolled in the course, which raises privacy issues.)

As I said previously, the best thing for you to do is to do the Moodle Teaching Basics course which is self-paced and you can do it at your own convenience. That also has a certificate.
Learn Moodle Basics is a facilitated course which runs twice a year over four weeks. The next run will be early 2022. The 3.11 course you joined on June 14 actually began on June 7 and finished on July 4, with an extra 8 days to allow people to complete the activities.
