On the front page of this site, if you click on "Powering learning environments worldwide" you will see logos from a variety of organisations - if you come back to the page several times you will see it has refreshed and shown more ( I think there are five sets in all) including Shell, Microsoft, Novell, BP, Subaru, Google (assuming they are reputable enough for you...)

Well I would agree a time with her when she can log in and go to the course and you can watch the live logs to see what happens - also I would double check she has submitted the quiz at the end when she has been through the questions.

Well that's difficult then, agreed  So in the logs however, can you at least check that she has accessed the course? Before finding out where there might be some complex error we need to double check  the obvious ones first, ie she is in the right course etc. Can you check she only has the student role and no other role in the course (look in "other users" for example) It shouldnt make a difference but it is worth checking.

Have you stood over her and watched as she logs in and does the quiz?

You say one student is one of the site administrators and you removed her from this role? Did you remove her from the role of site administrator by going to Site administration>Users>permissions>Site administrators? And in your course did you then enrol her as a student by going to Course administration>Users>Enrolled users and enrolling her as a student?
