Oops Chris I see you posted the same question twice and I actually answered twice because I thought I was going mad and my first reply hadn't happened.  I will quote from theforums code of conduct below and ask the moderators to remove one of the discussions. Thanks 笑顔
 

Post your question in one forum only

Posting the same question in multiple forums of the same language is of no benefit. It fragments the support you receive and makes it more difficult for other users to find the correct information when they search.

Site administration > Appearance > Boost and then click the cog icon to get to Boost Custom theme settings and then click Background image to add a background image of your choice. (I will go and add it to the 5.2 documentation) For the text, you need to go to Administration > Login > Login settings and add your wording to Instructions.

Hello again Steven. As explained in the first FAQ I sent you, it says (quote) Moodle Academy courses are openly licensed and able to be copied and re-used. 
This means that you can copy and paste the materials into your own course for free.
 
Lower down that FAQ and in the second FAQ I shared it says that you can purchase other courses - at 750 euros each - and it says (again, quote)  If you want to do this, please get in touch with the Moodle Academy team via the moodle.com contact form.
 
As for other courses available, well you are free to log in to the Mount Orange demo site with the Dean role (which is the Manager role) and back up and download with user data any courses that look interesting to you, and you can then resuse them in your training site for your staff to practise grading. Do please do this just after the hourly reset, to make sure you don't accidentally back up someone else's experimental activities.
