Moodle Docs are extensive. The problem is to find the correct pages. About performance testing, for example, https://docs.moodle.org/en/Test_site_generator and https://docs.moodle.org/en/JMeter_test_plan_generator - to be found in https://docs.moodle.org/en/Performance_recommendations which in turn is in the forum documentation https://docs.moodle.org/en/Performance.

In the docs: https://docs.moodle.org/500/en/Git_for_Administrators#Obtaining_the_code_from_Git. Never seen a 5003 tag though.
 
Advantages? https://docs.moodle.org/500/en/Git_for_Administrators#Upgrading_to_a_newer_major_release for one, and 'git pull' to update (latest in the same major release X.Y).
