Can Moodle turn off grades completley so it can be more of a content management software for lessons and audio, etc. we want the functionality of Moodle without student grading necessary, any thoughts or how to's would be awesome,

Grading is central to Moodle''s functionality as a learning content management system, so there is no way to turn it off globally but you can choose not to display grades at the course settings level and many of the modules (such as the forums) have the option not to have grades.
Have you considered conventional content management systems such as Mambo/Joomla? I would be interested to know what it is about Moodle that beats these CMS, other than the grading.

Tim, thanks for the reply, we are really just looking for a cms for our audio, video and written lessons w/o grading. I will try your recommendations,

I like to have a course but don't want it to be graded. Everytime I insert a quiz, I am always given an option to set the grading parameters for the question.
Is it possible to have all these options removed?
In short, no.
You can use the options to hide the marks and question value from students. You can give all answers 100%, so scores simply show the number of questions attempted. You can hide the quiz from the Gradebook. You can hide the Gradebook from students.
However, perhaps a Questionnaire might be more suited to your purpose than a Quiz.
