A Glossary (and maybe the FAQ) would be a really good application of the future "data" module:

Basically, the teacher will be able to define fields and permissions (eg give students write permission), and the module automatically handles all the forms to add/modify/delete records. There would also be some options to help define how the data is displayed.
eg in this case, you'd define a 'word' field, then one or more 'definition' fields.
