Currently our moodledata reside in the same server with moodle application. We are planning to place it at the different server. How to connfigure it in conffig.php or any other files? Is this will improve the performance of overall application?

If you are using a Linux/Unix-system, just mount a directory that points to the folder on another server + set the permissions accordingly. Overall performance can increase if the web server and the data file server have a fast connection between them + the data file server has fast hard drives and so on...
Edit: then the config.php should point to this mounted folder as its dataroot.
