1. How the access to courses works in the Moodle? For example we want to give students access to lesson # 1 on monday, lesson # 2 on thuesday, etc. And access to the lesson # 5 will be given only on friday. I guess Moodle provides access to all the lesson since very start? Or we can regulate access?
You can release many activities by date. Look at the assignment and quiz setup screens, for example. You can give them open and close dates. If you want repeating Monday availability, however, I'm not sure about that.
3. As I see Moodle works as a classical school: a bunch of people starts to study at the same time, for example since 1 sept. But we want to every student can start study in his own time - a person pays money, registers and begin to study. Does it works in Moodle?
Lots of people are using Moodle as a frame for self-directed study. Look at the activity locking plugin, and conditional activities (which is still under development).
