On the questionnaire I have the students complete a response to the questions. I would like:
If I restrict viewing response options to anonymous, students will be able to see other student responses (correct?). Will the instructor see respondent student details?

Are you sure you are talking about the Questionnaire activity? In Questionnaire you cannot grade the students' responses to the questions.
Hi, yes. I don't use the gradebook function (our college has a different grading platform). I keep a list of the assignments, so I need to know which students completed the questionnaire in order for me to mark it.
At the same time I want the students to see responses, but not who made the specific response.

If you set your questionnaire Students can view ALL responses to After answering the questionnaire OR After the questionnaire is closed OR Always... THEN the students will view the statistics of the other students' responses, NOT their individual responses. What more do you want?
