During a given semester, I have dozens of learners all on differing learning plans with differing start/end and due dates with usually no more than half a dozen working on the same tasks at the same time. Groups and groupings is how we manage assignments with group (and sometimes user) overrides for dates. The filter codes plugin lets you customise text and titles.
Learning materials are sometimes in a separate course connected via a meta enrolment, for example, a generic programming competency that is language agnostic, but learning materials for different languages in their own course.
It works for us, but is a bit of a pain to set up. Having relative dates working for all actives and not just an experimental feature for some would go a long way. It may be enough for your use case?
