I am an English Language Teacher. I use the Moodle Book resource everyday with my learners.
I use a book for each week. I use one chapter for each day of the week.
I wish that there was a way to have restrictions by date and time for each chapter of the book instead of hiding the chapter or if both was available that would be simply amazing.

I have a similar issue with restrictions, as I would like to be able to limit certain chapters to specific groups (for assignments or projects or readings) without having to duplicate the book multiple times (and then edit it multiple times). There is an old tracker item on this https://tracker.moodle.org/browse/MDL-38764 maybe it can get some traction again.
In case you don't want to export your course to another system, you might have a look at the FilterCodes plugin: https://moodle.org/plugins/filter_filtercodes
With a good combination of Moodle's built in features and some of the codes, you will probably able to achieve what you want, without any changes to the book module.
