Bear in mind that you can point most modern mobile phone cameras at any text, and it will transcribe it for you. In 2022, there is essentialy n technical 'solution' to make it impossible to copy anything.

In the quiz settings, if you activate "Full screen pop-up with some JavaScript security", then the students are prevented, as far as is possible, from using facilities like copy and paste.

If you really want to block a student from copying text in an exam, you could consider running the SafeExamBrowser to fully lockdown a session for a student. Then, there's no chance they can copy text and images.
On the other hand... why is such a level of control required?
