It turned out that the ICT team at work removed a course format plugin which reset all the courses to single activity, so I reinstalled the course format plugin, applied it and it was fine after that. It was very confusing for a while though! Good to know that the forum is the default activity, as I struggled for a while with deleting that aspect of the course and had no luck.
