interactive video work perfect on my moodle 3.7 site both in windows browser and mobile browser ( chrom , firefox , android  phone ), also i did not get any negative feed back from students with mac or iphone
but
the big proplem that h5p can not go for full screen , no button that allow full screen
i also tried to embed the h5p activity in a page activity , the button appear ! ,but no action

Have you tried updating to the latest version of the Moodle App ?
Also, if you need full screen, then you could provide a link to the video that will launch in a mobile browser (external to the Moodle App) instead.
