I noticed there is no option to disable cancellation so that students are unable to cancel their appointments.

What about using guard time to do this? This sets a number of hours prior to a session, in which they can cancel. You could set this to a 'high' number of hours?

That's right - student able to cancel their slots, but only until the guard time limit.
