I haven't found any information on where messages.moodle.net is hosted, this would be
important to our university to know when we are deciding if we can use the service for
our platform.
Any information or insights would be welcome.

in Germany, and we are aware of the privacy legislation in the EU so we don't store any information that could be considered private.
We have plans to add some legal/usage information in messages.mooodle.net soon
