I need to be able to get course participants to type in free text in response to a question/prompt and then either receive an email copy of their typed response or print it out...
Is this possible in the Lesson, Quiz, online Assignment? Or in any other way? I'm not likely to be able to add plug-ins to be able to do this so need to find a solution that is based on core Moodle functionality...
Can anyone suggest how I might do this? Many thanks for your help!

Not dense, you're just missing the back story...
This will be a course to be used by participants (many of whom haven't used Moodle before and not necessarily technically literate/confident) to do one piece of CPD. Because of the nature of the user-base, we're trying to avoid too many steps to the process, or reliance on pushing them out to other software such as Word - we'd rather contain them in the Moodle course and in the most user-friendly, easily-navigable way possible.
So I've been asked to try and create something that will let them input their responses to the content of a Moodle Lesson as free text and allow them to save/print their responses at the end (for CPD evidence).
I thought I'd be able to add MCQ and Essay questions in several pages throughout the Lesson and hoped to let participants save/print these on completion. But at the moment I can't do this - in fact, I can't even find a way as a student to go back in and view their previous responses to questions within the Lesson. Perhaps this is me being dense?!?
So I'm looking for a workaround... and was thinking instead of having a Lesson without question pages. Then to link to another Moodle activity from the final page of the Lesson (eg an online Assignment or Quiz with a single essay question) in the hope that they could then easily print or email their responses so they can keep a copy for CPD evidence.
I haven't found a way to do this yet (other than printing from the Browser which isn't ideal)... so I still may have to moot your Word template and upload as Assignment approach with the project owners...
But if you can think of any other magic I can work (now you know the backstory) that'd be great!

it is times like this when there is mention of CPD...that I automatically think portfolio/e-portfolio but you said you need to avoid plugins/addons. I am reading about the book module/resource and I am thinking wouldn't it be nice for students to manage such a resource...so not a given book with the stuff in it already-previously input by the teacher, but a book that can be created, accessed and saved by the student, with the sort of stuff you are talking about....can be saved/shared and printed.
Alternatively, you don't mention whether this is individual outcome only or collab...individual CPD documentation Record of Achievement can be nice alongside other peers' outcomes (shared)too-great for context-capture ...so am thinking Wiki....
As for quiz.....always nice to include across activities, but I am left with the question as to how transferable it is across other modules/resources in moodle...you know like you say, having a quiz in a lesson for example-I don't know that answer....mmmm

You can use the Database activity (Database module). It can be a simple activity with one textarea (editor) field to enter the submission text. For printing you can add css for printer friendly view and a bit of javascript to to display a button which on click will open the window print dialogue box. There should be a more detailed explanation in the Database module forum and we can offer further help there.

But if the student receives email they can then print-right...and print from the following process...
....Essay question in quiz in lesson, which can be graded and emailed with marker's responses to students.
