You can go to see server log, select the user from the popup menu, select the course from another popup menu, and select any time from yet another popup menu, then search and sort results by access.

If you mean doing it programmatically, check out the code behind the log searches. You can also use phpadmin or any other MySQL admin program and poke around the tables. They are fairly straighforward and have clear names. List of users, for example, is in (your-prefix)-user.
