I make two assumptions:
- the "book" which your instructur is talking about will look like any higher mathematics book which you buy in an academic bookshop, once printed on paper
- she teaches at tertiary level

In trying to do that in Moodle wiki, she'll face a series of obstacles:
- as you already mentioned, Moodle wiki has no proper export facility to make PDF
- there are wikis which have "book making" features, I think MediaWiki has one
- even then, they lack proper type setting of a LaTeX style

In short, the web is screen, not paper! Or, HTML is not PostScript. (Well, that may be outdated. I am open for corrections.)

I would first decide the mark-up: LaTeX, AsciiDoc, etc. Then setup a version control system for collaboration: Git, subversion, Trac, .. The first step won't be a big hurdle, since the students already know mark-up. AsciiDoc has the added advantage that it can be exported to all kinds of fromats including EPUB. The second step, version control, will be something new for those who know only "WYSIWYG" wikis
