In the assignment setup, you can choose to receive notifications about submissions: where is the email address stored that these notifications are sent to?

Hi Russell

This setting will send a notifications to users associated to the course with the ability to grade an assignment, normally the teacher(s).

Those users then receive the notification via the email in their profile if they have configured their message settings for 'Assignment notifications' to "Email" - they can also set popup.
