Hi Jamie,
Under Site Admin>Appearance>Navigation you should be able to untick 'Show all courses'.
We then also have all students enrolled in one course which is a 'Moodle How to...' Course. This means those students who aren't enrolled in anything will only see the 'How to..' course.
Bit of a workaround but hope this helps.
