Hi there. These are big questions and you would be better off asking in the Using Moodle forums as this is really for social chat - but as a quick reply - if you go to site administration>appearance>course managers then you should be able to take out/uncheck the roles you don't want to appear under the course name. Make sure in each course that you have only assigned your teachers the role of teacher and not adminstrator. Teachers should not be able automatically to see others' work in other courses unless you have allowed people to self enrol in which case a teacher could enrol on someone else's course as a student -if your teachers can get into each others' courses then check you have not assigned them site wide in users>permissions>assign system roles - there should be nobody in the teacher role there (or student role) Any other queries, do feel free to post in the Using Moodle forums
