One trick my boss uses is to stand behind a "naive" user such as your ELS students and ask them to speak aloud their thought process as they work with the interface.
From that, you can learn what they think your labels mean. If you do this, please report back here, since ESL seems to be a big use of Moodle. A further report would be a big contribution. (I like your label changes & Mary's, too.)
