Thanks. Your comments got me to questioning whether TeX itself was working correctly even though the TeX filter setup looked OK (most values at default, green checkmarks confirming paths to executables, etc). It wasn't. Article http://moodle.org/mod/forum/discuss.php?d=118478 did the trick!
