Earlier this year I put together a quick intro to Moodle and online teaching for a group of lecturers at Fiji School of Medicine plus some people from POLHN/WHO. It's strongly based on docs.moodle.org and Jason Cole's book.
(More about that project here: http://moodle.org/mod/forum/discuss.php?d=66852 )
The content I've written to be under a similar license to docs.moodle.org content -- currently GPL I'd love it if someone was to merge this with the Teacher documentation page.
Or not -- in the end, I'm a programmer, not a trainer... and it probably shows though some old hands in moodle training have told me I shouldn't be too ashamed of it.
