Maybe so, but if the install went well you accepted the defaults, GIFT seems to be the culprit, right?
You may have simply found a little bug and done everyone a favor by calling attention to it. Well, at least math people who want to use the GIFT utility, but that must be a great many Moodlers!
I see that Scott Elliot has already replied to you. He is not only an expert Moodler but is also a math guy. I think you are in good hands now.

Specify text-formatting for the question

Currently the available formats are moodle (Moodle Auto-Format), html (HTML format), plain (Plain text format) and markdown (Markdown format).
