You seem to be running Moodle 3.11 or higher, based on links in the Brandeis LATTE documentation to the Moodle documentation. If you edit the Course settings and expand the "Course format" section, you can see the available course formats in the "Format" drop-down menu, and you might have flexible sections already available.

Brightspace (by D2L) has a nice facility to create hierarchically nested sub-units within a course section, and these sub-units can be collapsed or expanded (see screenshot 1 below). Moodle doesn't support subsections by default, but the Flexible sections format plugin would give you the same facility (see screenshot 2). You will probably need to get your site administrator to install it.

In Moodle you can't move Assignment activities into the Folder resource, but you could move them into a different course Section or Topic, and move that topic/section down the page.
Alternatively, you could use Activity completion and Access restrictions to hide assignments from students who have already submitted to it, although this brings a different class of problems into view (grade visibility, etc.).
