However, Moodle may not be the best place to store "large" video files. A proper streaming service (even YouTube) will make a better job, most of the time.

You should also check the Javascript Console in your browser when the error occurs. Any (red) errors?
 
If there are - slighly more challenging - you can try again with the Network tab (in developer tools) open and look for the service.php that has failed. The response should be enlightening.

How is your caching configured?

You're possibly just asking too much of your server - doing *everything*. Your processor may be a bit under-specced, too. I find on recent Moodle versions that cache performance is critical. Even offloading the cache to an external Redis server may help. A separate database server would be good too.
