Thank you, Helen! This actually put me on track to solve my other, related problem, which was that Course Creators were receiving emails when students submitted assignments. I changed the permissions in the Course Creator role to disallow grading assignments. Hopefully that will solve the problem.
Now I just need to solve my Quickmail email problem, but I suspect that requires some code editing...
