How to automatically assign Role of Student to all who enroll in a certain Category?

Uf, the above pretty well says it all. We are running the 1.9 version and have added a new field to the login/registration page which indicates a certain Category. We would like for the following to happen:

once we have received the e-mail from the student-to-be and have mailed them the key and the login to the Category, they will have access to all of the Courses in that Category.

Is this possible for Roles and if so, how should we set it up, or do we even need to use Roles for this? We've been browsing the forum for hours and have run out of posts for this most recent version of Moodle which we are running (as well as going slightly blind).

The enhancement suggested in MDL-14298 would handle this. I created it based on a similar use case presented by a user in this discussion.
