I just create a quiz with a 1 multi choice questions that allow multiple answer choice.
When a student select more than 1 answer for this question (in the table mdl_quiz_response store in the field answer all the answer separated by commas) in detailed statistics for this questions don't show the response of the student and don't compute it, if correct, in the ITEM ANALYSIS
