I notice there is an executable file in the moodle core script at

filter/tex/mimetx.exe

Can anyone confirm exactly what this executable file does as my host does not allow executable files on their server.

I have my site just about ready to go live after months of work, now I'm concerned that I might have to use another script because of this exec file. If I remove it, what functionality will be impaired?

This file is there to allow the automatic generation of mathematical formulae (as a graphic) within forum messages, journals and other text areas.  It takes a particular dialect of TEX as an input.

It is one of the optional text filters that moodle provides.  If you don't want to use the mimetex filter then you don't need anything in the filters/tex directory.

Many thanks for the quick response, at least I can rest assured now that this exec file will not do anything nasty to my host or apache server environment.
