Roles and permissions

Has anyone come up with a way to allow overide of assignment and quiz available dates?

Created a role called "Incomplete" and gave user permission to submit assignments. This didn't overide the quiz closing date.

What I would like to be able to do is:

Allow existing students to continue to login in and view grades, but not retake quizzes or resubmit assignments.

Allow exceptions for the students who are given an incomplete to upload assignments and resubmit quizzes.

The ideal feature would be to allow the role to control the date/time of quiz or assignment submission, this would allow for a controlled incomplete.
