However, when I type a TeX phrase into my Lesson pages, the output is a hyperlink: Blue, and same exact symbols that I have typed except for the double dollar signs.
Example: I typed $$x^2+x-1 = 3^2 + 3 - 1, and I get:
If you click, it opens upa small window with exactly what you already see.
Hardly TeX, but it must be recognizing something, since the double dollar signs are not there. I did tell my administrator to turn "On" Tex, and that allowed me to get these hyperlinks, but it's not TeX!

No, James, thanks for the help, but I didn't forget the last double dollar signs. I just went and checked through all my pages (I wrote about 20 lesson question pages before realizing that the TeX didn't work....) and on all of them I remembered the double dollar signs. Sigh.
The good news is that there is a built in tool to help you find out why it is not working. If you go to the /filter/tex/texdebug.php URL on your site, then it will guide you through. As part of that, you may need to go to Administration ► Modules ► Filters to adjust some of the settings for the TeX filter there.
I am not sure if you fixed your problem yet but I just ran into a similar problem but in case you didn’t or someone else is having the same problem, I wanted to post what worked for me.
Here are a few things to check that helped me.
1. Make sure TeX it is enabled (eye is open) under administrator --> modules --> Filters --> manage filters
2. Look at the TeX Notation link also under filters. If you have a Red X next to the latex and dvips binaries then your path is incorrect or you don’t have latex installed. I used yum to install latex
yum install tetex-latex
someone also suggested this: yum install latex
Now if you also have a red X next to convert binary your path is incorrect or you need to install gostscript or ImageMagic I installed ImageMagic and if fixed the problem.
yum install imagemagic
If you are using apt-get then just do a google search to find how to install those. I hope this helps. I am new to Moodle and this is how I fixed my problem so I hope it will help someone else.
