I have been using Moodle for about 2 full weeks with about 35 students in a vocational high school. I am concerned that by having students upload their files regularly for grading that I will use too much disk space and bog things down.
If I delete the assignment from the course block after I've graded it and given students their comments will this action delete the uploaded files that go along with the assignments?
If not how should I delete these and is there a quick way?

I wouldn't worry too much about disk space. You'd be surprised about how slowly it mounts up. I've been running Moodle for 4 years in a large-ish school (1200 users). I've only just had to upgrade the server from the original one which used a single 60GB HDD. The actual size of the moodledata folder is only 15GB.
