I was having this same problem and you CAN rename the category name. Not sure on the description but for the NAME, all you have to do is open the Category and at the bottom of the page there is a space with the Category Name and a button labeled Rename.  Just type in what you want to name it and click rename.  This is of course on version 1.8.3 that I am using. But it is that way on 1.8.2 also.  Hope this is helpful.
