Teaching with Moodle

What is the best way to schedule one day instances of a course in Moodle. Is this possible and can you assign students to the individual instances.

I.e. I want the following structure:

Category1
Course1
Date1 (Own users, teachers)
Date2 (Own users, teachers)
Course2
Date1 (Own users, teachers)
Course3
Date1 (Own users, teachers)
Date2 (Own users, teachers)

Every course has one set of resources but the course is scheduled as one day courses throughout the year with different users every time. I would like to know if anybody else uses Moodle for the same thing or whether there are other applications better suited for this.
