is there a way to upload all assignments, activities, tests, etc and then schedule them for release so that they aren't availalbe until a certain date?

You could build your course, make a backup, delete it and restore it on the desired day (Eloy would love the testing...
), but you can much easyer hide your entire course and unhide it when you want, or you can set a key and give away the key on a certain date...

Option B
Build you site and all your assignments (hid them) and just unhide each assignment as you want to make it available - not automatic, but works
