Is there some way I can make it so my course creators are not automatically enrolled in every course in the site? This is what their setup looks like.

If a user is assigned a global role or a role in the course category context then the user has this role in ALL courses in that context. Good, I want my teachers to be course creators.
Thus users who are students or teachers at the category level appear as course participants in all courses in that category. Why? If they create a science course why enroll them in the Maths courses as well. They only want to be "participants" in courses they create!!!
Please check Administration > Users > Permissions > Assign global roles. I have and I still think I want to give them global "create" privileges.
and also the Assign roles link in course categories page and unassign users as necessary. I can't find an assign roles link in the course categories page.
If I don't use the "assign global roles" function how else do I make Freddy Smith a "course creator" for just the science category and spare Freddy from getting bombarded with forum posts from every course on the site.
You may want to check out the hidden assignment feature. I haven't used it, but it seems to address this issue.
