Nothing fancy, you just have to edit the image itself. You will find it in the pix folder of the theme and it is called big_image.jpg.
Easy as that.
I have re-jigged the theme a little. You can see a variant at http://playpen.riverview.nsw.edu.au.
All I did here was change the image files to acheive a whole new look.
