Hi Max,
Please check Administration > Security > Module security for a setting allowing you to choose activities which you do not want displayed in the "Add an activity" drop-down menu for teachers.

Appeared else question.
Possible do following.
There is created activity. Displaying at some week. Possible do that teacher was not displayed line element this point management. (move right, move,.... ). А for all rest she was displayed.
