Is there a document anywhere which list the CSS class of all of the elements in a standard Moodle theme and in which of the style sheets it exists (this will simplify changing and creating new themes)

There's some limited documentation here: http://www.themegurus.com/css_chats.php it's version 1.5 and 1.6 specific but it does help get started.
